These are the perfect high-protein, low-carb, make ahead breakfast to get you through the week. You can add any ingredient you like in an omelet—my favorite is bacon and green onion.
INGREDIENTS
- 12 eggs
- 4-5 slices of bacon
- 1 bag of shredded Cheddar or Jack Cheese
- 1 bunch of green onions, chopped
- Salt & pepper
- 12 silicon baking cups
DIRECTIONS
STEP 1
Cook slices of bacon in oven or in microwave until very crispy. Once cool, chop into small pieces.
STEP 2
Using a hand mixer, beat eggs. Season with salt and pepper.
STEP 3
Place silicon baking cups on metal pan (either a cupcake pan or flat metal sheet pan).
Fill each baking cup with cheese about 1/8 of the way full. Then add bacon crumbles and green onion. Distribute eggs equally between all cups, filling to about 3/4 full.
STEP 4
Bake at 350 degrees for 25 minutes or until golden brown. Cool completely, then store in the fridge in an air-tight container or portioned out in ziplock bags. When ready to eat, just heat up in microwave 15-35 seconds.
