This tiki cocktail was originally created at Skipper Kent’s in San Francisco, and it’s now a staple at Smuggler’s Cove. If you aren’t near the bay area, it’s easy to mix this cocktail up at home.
INGREDIENTS

1.5 oz Plantation 3 Star rum

.5 oz Cherry Herring

.5 oz Falernum

.25 oz Dry Curaçao

.75 oz fresh lemon juice
- 1 oz sparkling water
- Cherries, for garnish
- Mint sprig, for garnish
- Candied lemon wheel, for garnish
DIRECTIONS
Add rum, Cherry Herring, Falernum, Dry Curaçao, and lemon juice to a shaker filled with ice. Shake or 15 seconds until very cold. (Or, you can flash blend with crushed ice.)
Strain into a pearl diver glass, filled with crushed ice. Garnish with mint sprig, cherries, and candied lemon wheel.
