Makes about 3 dozen cake balls


INGREDIENTS

  • Red velvet cake mix
  • 3 eggs
  • ⅓ cup vegetable oil or canola oil
  • 1¼ cups Pike Place® Roast brewed coffee (or your favorite Starbucks brew)
  • 2 tablespoons of cinnamon (optional)
  • Cream cheese frosting
  • 2 bags of white Wilton Candy Melts
  • Green fondant
  • Edible gold stars
  • Parchment or wax paper


DIRECTIONS

STEP 1  Bake the cake
Follow instructions on cake mix box. Substitute the water for Starbucks brewed coffee and add cinnamon. Bake cake and allow to cool completely.

STEP 2  Form the balls
Crumble the cake and place in a bowl. Add about 3/4 of the cream cheese frosting and mix together until completely incorporated.

Roll cake mixture between palms until it forms a round ball. Place balls on a parchment-lined baking sheet and place in the freezer for about 15 mins. You want the balls to get a little firm so they don’t fall apart when you coat them. (If you complete steps 1-2 in advanced, cover cake balls and place in the fridge instead of freezer.)

STEP 3  Create green dot
Place green fondant between two sheets of parchment paper. Smooth out with a rolling pin until 1/8 thick.

Cut circles out of fondant using a small round cookie cutter. (I like to use the large end of a cake decorating tip.) Place on wax paper and set aside.

STEP 4  Dip and decorate
Melt Wilton Candy Melts in a bowl according to package instructions.

Drop the cake balls into bowl of melted candy and roll round with a spoon until completed coated. Scoop up ball and tap spoon on edge of bowl to remove excess coating. Place coated cake ball directly on a sheet of parchment or wax paper.

Immediately add the green fondant dot and sprinkling of gold stars before candy coating sets.
