These sliders are so yummy and best of all, you can make them ahead in a crockpot and assemble when you’re ready to eat!

INGREDIENTS

Pulled Pork:

  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, thinly sliced
  • 1 cup chicken stock
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 to 2 lbs. boneless pork shoulder
  • Salt Lick barbecue sauce
  • Brioche slider buns
  • Pickles for garnish

Coleslaw:

  • Coleslaw mix
  • 1 tablespoon distilled vinegar
  • 1/2 cup mayonnaise
  • 1 tablespoon white sugar
  • 1/4 teaspoon salt & pepper


DIRECTIONS

STEP 1  The night before
Prep the pork: Place the onions and garlic in an even layer in a crockpot. Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat on top of the onions and garlic. Place in fridge.

Prepare the coleslaw: Whisk together the vinegar, mayo, white sugar, salt and pepper in a large bowl with lid. Add the cabbage, carrot, and onion. Cover and shake to combine.

STEP 2  The next morning
Add the stock to the crockpot. Cover and cook on low for 8 to 10 hours, until the pork is fork tender.

STEP 3
Turn off the slow cooker and remove the pork to a cutting board. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat.

STEP 4  Assemble sliders
Pickle on the bottom, then pork. Add some BBQ sauce, then top with coleslaw. Enjoy!
